Raspberry Green Tea Rum Pops

  I am so excited to have a guest blogger today.  This is Maddie from The Whimsy One and Thankfull Tummy.  She is so sweet, fun and makes some pretty yummy snacks.  Today she is sharing a tasty treat for all of you to make.  Put these popsicles together this week and give yourself a nummy adult treat this weekend.  Take it away girly.

  Hi guys! I am Maddie and you can find me blogging about a plethora of things at The Whimsy One, usually it is about our travel and random ramblings and sometimes I touch base on more personal issues such as mental illness and infertility. You can also find me at ThankFull Tummy where I share my favorite restaurants and recipes, including lots of cocktails!

  I was lucky enough to meet Megan when we attended a blogging conference this summer. I think to say that we were instant friends would  be an understatement. I took one look at her boyfriend jeans and stilettos and knew we would form a fast friendship.

  I live in Raleigh and since it is so hot here, I love to make popsicles. And I also enjoy making “adult” versions as there are no kiddos around these parts. But rest assured, the one I am sharing to day can easily be made kid friendly! 

  I am a big proponent of green tea. I usually have a few cups a day but I also try to work in other ways to have it. I usually brew some and freeze it to use as ice cubes for my smoothies and as I was making cocktails for the summer, I decided to try using green tea in a few recipes. 

  This was more than a good decision. and this was my favorite version by far. 

  I am showing this in popsicle form, but you can most certainly just drink it straight from a glass. As a matter of fact…I may have done that myself;)


Raspberry Green Tea Rum Pops
2 green tea bags 
1 1/2 cup water
1 cup raspberry lemonade
1/4 cup rum

 

  Boil the water and pour over the two tea bags and let them steep for about half an hour. Once it has cooled, add it to a shaker with the lemonade and rum. Shake thoroughly. if you don’t have a shaker large enough, just combine in a large pitcher and stir. 

  Pour into popsicle molds or small plastic cups. Place in freezer and set a timer for 45 minutes later. It will have started to harden and you can place your sticks in the mold. You need to let freeze for at least 24 hours. 

  Keep in mind this will be firm, but slushy. Due to the alcohol content they will not be completely frozen, but enough that they should pop right out of the molds.

    This looks refreshing! and pretty too! Pinning to try when the kids are not home because there is no way they will let it sit in the fridge and not get a bite! 🙂

Have you been to Ensenada? What’s your favorite spots? We had a great time on our Ensenada excursion on our Carnival cruise. Including rain, pina coladas, La Bufadora and wine tasting at Santa Tomas winery. If you are in SoCal I recommend making your own way across the border to Ensenada.
